Roti is generally an Indian bread made out of whole meal flour traditionally known as atta flour. Lot of patience is needed to roll out a perfect roti as thin as possible.

Benefits of eating roti made from whole wheat flour is that it takes longer time to digest which help maintain blood sugar levels. Good for weight watchers.

I am giving a recipe which can be used for breakfast or packed in tiffin box for children. First the dough had to be rolled out and made round disk or roti. Then on a hot greased tawa or flat pan vegetables and egg  are added and on top a round disk/roti is put. After it’s cooked sauces are added and rolled.

INGREDIENTS

  • Wheat flour 1 and half cup
  • Tomato 1
  • Capsicum 1
  • Eggs 3
  • Oregano seasoning 1 tbsp
  • Onion 1
  • Olives 3 tbsp
  • Olive oil 2 tbsp
  • Salt to taste

METHOD
Chop all vegetables length wise

In a large vessel add wheat flour, 1/2 tsp salt, and enough water to prepare a soft dough. Cover and keep it aside for half an hour.

Divide the dough into three equal portions. After dusting with flour on the working board roll out the dough in a disk shape/ roti little thick of 6 inches.

Heat an iron tawa/ pan or nonstick flat pan.( Iron tawa is better option). Grease it with olive oil and add one wheat disk/ roti and cook on both sides, adding olive oil on top till they r done. Repeat procedure with the other two and keep it aside.

Divide the vegetables in three portions. On medium heat add 1 tbsp oil in the same flat  tawa, add one portion of chopped onions, capsicum, olives, tomatoes.

In a small bowl add salt ,1 tbsp oregano ,an egg. Beat or whisk and pour on top of the vegetables, cook on low heat. Place on top one wheat disk/roti and press it nicely from all sides.


Once the egg underneath  is cooked turn it keep on the other side for half a minute.

Repeat the process with the other two.


Add what ever sauces you like to add on each of the wheat disk/ roti and roll it.

Serve hot. Enjoy !!!
