After I attended masterchef tamil audition I wanted to try out old recipes with a twist. As I was browsing I saw a baked samosa video by chef Vikas Khanna. I loved the pattern on the samosa and tried out. There was no recipe only cooking video so I developed my own.
Prepared the pastry dough and then prepared the filling for the samosas. Baked the samosas and it came out so beautiful. The crust was so beautiful crispy and melted in my mouth.
Potatoes are very healthy, inexpensive and popular root vegetable. Health benefits of eating boiled potatoes are they are rich in vitamins, phosphorus, minerals, and low in calories
SERVES : 3-4 PEOPLE
INGREDIENTS
FOR THE DOUGH
- Maida / all purpose flour 1 cup
- Butter 50 gm
- Salt 1/2 tsp
- Sugar 1tsp
- Cold water
FOR THE FILLING
- Boiled Potato big 2
- Onion finely chopped 1
- Ginger finely chopped 1 tbsp
- Green chilies finely chopped 1 tbsp
- Coriander leaves a handful
- Turmeric powder 1/4 tsp
- Garam masala powder 1 tsp
- Oil 1 tbsp
- Salt to taste
OTHER INGREDIENTS
Egg 1 or 1/4 cup milk
METHOD
HOW TO PREPARE THE DOUGH
In a food processor or by hand place the flour , sugar and salt and process until combines. Add the butter cut in cubes which should be taken out from the fridge and process until the mixture resembles coarse meal (15 seconds)
Take out the mixture in a bowl and then slowly add ice cold water in a spoon little by little and knead until the dough just holds together when pinched. (After you mix it the consistency should be when you hold little dough and press it should not break and when you release it should break,at means the proportion of butter and flour is right). Gather it.
Add little by little cold water and prepare a dough. It should not be sticky or soft. It should be slightly hard. Roll it and cover in a cling film and refrigerate for half an hour.
HOW TO PREPARE FILLING
In a kadai heat a tbsp oil add the ginger, green chillies and onion. Saute till onion becomes golden in colour.
Add turmeric powder, salt and boiled mashed potatoes. Mix everything together. Add garam masala and coriander leaves. Incorporate everything nicely and turn off heat. Keep it aside let it cool down.
HOW TO PREPARE SAMOSAS

Add some flour on the working board and roll out the dough, it will be tough while rolling out and will break in edges, gather and roll out. After rolling out in a large rectangle, square or circle shape.

Cut out into square shapes of 4 inches.

Draw a light diagonal on to one square and start making slits.

Place the filling in between.


Lift one edge and bring it on top of the filling.

Seal the edges nicely. Repeat the process.
Preheat the oven to 180 degrees for ten minutes.

Keep all the samosa on a baking tray lined with parchment paper.

Separate egg whites from yolks. Apply the egg yolks on top or u can apply milk on the samosas on top side.
Bake at 180° C for 20 to 25 minutes or till golden in colour at convection mode, middle rack.
Serve hot with any green chutney or tomato sauce.
