Mudah Dan Telur dadar -This Simple and tasty egg omelette used to relish when I was in Indonesia three decades back. We were staying in a prawn farm where my hubby was managing the farm. Food was prepared by cooks for everyone working at the farm. There used to be a huge spread and every day non vegetarian dishes outnumbered vegetarian dishes. I was very fond of one of the dish thhich was prepared daily and that was omelettes.
The cook used to slice the shallots , spring onions and red chillies very finely add the eggs beat it and and over the pans with oil. The omelettes after cooking used to be very thick and then it was cut in rectangular pieces.
I just recreated the dish when I got hold of some red chillies and yeah adding shallots in omelette really tastes good. Though peeling shallots is very hard but it’s worth it. Enjoy with steamed rice.

INGREDIENTS
- Eggs 3
- Spring onions chopped a handful
- Shallots 10 -15
- red chilli 3 – 4
- Salt to taste
- Oil 3 tbsp
METHOD
In a bowl add finely chopped shallots, finely chopped red chillies, finely chopped spring onions and egg.
Add salt and Beat everything together.
Heat oil in a cast iron add the eggs , cover and cook . When it turns golden brown, flip carefully and cook on other side.
Take it out and cut in rectangles. Enjoy with steamed rice.
