Broccoli is also called a superfood as it contains a wealth of nutrients and antioxidants. Broccoli can be eaten raw or cooked. Broccoli is high in many nutrients, fiber, protein, Vitamins C,K, iron and potassium.
This recipe is very easy to prepare and quite delicious too.
INGREDIENTS
- Broccoli florets finely chopped 1 cup
- Eggs 3
- Onion medium finely chopped 1
- Green chilies finely chopped 2
- Boiled sweet corn 1 /2 cup
- Coriander or mint leaves finely chopped 3 tbsp
- Pepper powder 1 tsp
- Salt to taste
- Oil 1 tbsp
METHOD
In a large bowl break the eggs and add all ingredients excepting oil. Nicely beat till fluffy. The eggs should be at room temperature.
On a well greased iron tawa or nonstick pan add a tbsp oil spread evenly and pour the egg mixture.
Cover and cook till the underside is slightly golden in colour.
Flip it gently and cook on the other side.
Cut it in desired pieces and serve with rice or breads.
