Carrots are excellent source of Vitamin A, rich in beta carotene a powerful antioxidant, also contains folate, manganese, phosphorous, magnesium ,Vitamin E , zinc. They are sweet and crunchy and good for general health.
In this dish the vegetables are cooked in coarsely ground masala. Garlic, coriander leaves, fennel seeds and cumin seeds are coarsely ground and stir fried with vegetables.This enhances the flavour of the dish and gives it a unique taste.
INGREDIENTS
Carrot finely chopped 3
Capsicum finely chopped in squares 1
Onion finely chopped 1
Potato chopped in small cubes 1
Green chillies finely chopped 1-3 tsp as required
Turmeric powder 1/2 tsp
Olive oil/refined oil 1 tbsp
COARSELY GRIND
Garlic (Indian) 6-7
Fennel seeds 1 tsp
Cumin seeds 1 tsp
Coriander leaves finely chopped 1 tbsp
METHOD
Heat oil in a deep frying pan/ kadai and on medium heat add onions, when the onions turn golden colour add the coarsely ground masala,green chillies and turmeric powder. Saute for a minute till the raw smell of the garlic disappears.
Add potatoes and stir nicely, add the carrots and capsicum. Stir and mix nicely. Add a handful of water, cover and cook on low heat. Stir occasionally.
When the vegetables are done add salt and stir nicely for a minute or two. Turn off the heat.
Serve with hot steamed rice.
