Sweet corn can be cooked in variety of ways. It has great taste, low in fat and high nutritional value. The recipe given here is very simple. It can be eaten for breakfast or as an appetizer. Corn, onion and bell pepper is cooked in white sauce with cheese and used as a topping on the bread.
INGREDIENTS
Boiled Sweet corn 2 cups
Brown bread 5 slices
Garlic 3-4
Cheese singles 2
Butter/olive oil 1 tsp
Maida 2 tsp
Milk 1 1/2 cup
Capsicum diced small cubes 1 tbsp
Onion finely diced 1 medium
Salt to taste
METHOD
Toast the bread slightly and keep it aside.
Take a pan and heat oil add minced garlic and onions and saute till onion changes colour. Add the capsicum saute for a minute. Keep it aside in a plate.
Take the same pan clean it and on low heat add butter/oil and maida and saute for a few seconds, add milk which should be at room temperature and stir continuously to make a thick white sauce. Add the cheese singles and stir till cheese dissolves.
Add the sauteed onions , capsicum and the sweet corn kernels and mix in the sauce. Turn off the heat.
Pour the toppings on top of the toasted bread.
Serve hot.
