Bell peppers are available in yellow, orange, red, purple, green. They are bell shaped , plump and are also known as capsicum, basically less pungent and sweet than other peppers. For their attractiveness and colour these vegetables are used all over the world.

They are rich in antioxidants and have anti-inflammatory properties. Green pepper is good for healthy hair and nails, it is low in fat and calories.

In this recipe potato is cooked with fresh masala and then stuffed in capsicum and cooked in a iron flat tawa. Once cooked I added cheese on top of the Capsicum and cooked till it melted. The capsicum was crispy as I have not cooked till it became soft , the potato masala and cheese added flavour. Biting into it i could feel the crispy capsicum, soft full of flavour potato masala and saltiness of cheese. Its match made in heaven. I have explained in steps.

INGREDIENTS

  • Capsicum 3
  • Onion chopped finely 1
  • Green chilies chopped finely 2 -3
  • Coriander leaves a handful chopped
  • Boiled potatoes big mashed 2
  • Cheese grated( cheddar/ mozarella 4 tbsp
  • Turmeric powder 1/4 tsp
  • Chilli powder 1 tsp
  • Garlic ginger paste 1 tbsp
  • Coriander powder 1 tsp
  • Garam masala powder 1 /2 tsp
  • Cumin seeds 1/2 tsp
  • Refined oil 2 tbsp
  • Salt to taste

METHOD

HOW TO PREPARE THE STUFFING

Heat a tbsp oil in a deep frying pan, add cumin seeds, onions and green chilies till onion turns golden in colour. Add turmeric powder, coriander powder, garam masala powder, ginger garlic paste, red chilli powder and saute on low heat for a minute. Add the boiled potatoes , salt and incorporate everything. Saute for a a minute or two. Add the finely chopped coriander leaves and mix well, turn off heat.

Cut the top part and deseed the capsicum.

After deseeding the capsicum it will look like above.

Fill the stuffing till top nicely. There should be no gaps.

Cut the capsicum in the centre from top in halves.

Heat an iron tawa, add a tbsp of oil and place all the capsicum.

Cover and cook for 10 minutes on low heat.

Add grated cheese on top, cover and cook for 5 minutes or till cheese melts on low heat.

After the cheese melts turn heat off. Serve hot the capsicum as starters or can be taken with any bread.
