Chicken fried rice is a very popular dish all over the world. This is an Indo Chinese version of chicken fried rice. Rice is stir fried with other ingredients like chicken, egg, garlic, vegetables  and garnished with spring onions . I have added olives to it . Left over rice can be used to make chicken fried rice. It is easy to prepare and as tasty as you will find in a restaurant.

INGREDIENTS

Chicken cut in cubes and boiled  1 tea cup
Egg                                                            1 no.
Cooked rice                                           2 tea cup
Spring onions finely chopped       1 tbsp
Olives                                                       1 tbsp
Garlic finely chopped                      4-5
Ginger finely chopped                    1 inch
Red pepper bell                                 1 tbsp
Green pepper bell                             1 tbsp
Yellow pepper bell                           1 tbsp
Worcestershire                                  2 tsp
Soya sauce                                           2 tsp
Pepper freshly powder                  2 tsp
Olive oil                                                1 tbsp
Salt to taste

METHOD

Soak 1/2 cup basmati or any other rice in water for 30 minutes. Drain and cook the rice in 4 to 5 cups of water, till the grains are al dente. Strain in a colander and and let the rice cool. Keep it aside . If  left over rice is there it can be used to make fried rice.

Cover and cook the chicken in its juice  with salt for 10 minutes. Drain off  the excess water and keep it aside.

Take a wok/kadai add oil on high heat making sure to keep all the ingredients ready, add scallion whites, ginger,garlic and stir for few seconds. Add the chicken and saute for few seconds. Add the egg and scramble it. Add little salt.

Add the cooked rice andkee[ on stirring. Add soy sauce and worcestershire sauce and mix well.As soy sauce has salt so before adding taste and see whether salt has to be added.

Add all the bell pepper,spring onions and olives and keep on stirring. Turn off the heat and add crushed pepper.

Serve hot with any indo chinese recipe
