Chicken breast is a very good source of selenium, phosphorus, calcium, vitamin B6 and niacin. It helps to keep the bones healthy.

Chicken is high in protein content, rich in vitamins and minerals, aids in weight loss, controls blood pressure, has anticancer properties, reduces cholesterol and treats common cold.

This chicken sandwich can be prepared in a very short time, if you pressure cook the chicken previously,shred and refrigerate it. Or the filling can be prepared and refrigerated and used later. The spicy sauces and Italian seasoning gives the chicken sandwich a nice flavour and taste.

INGREDIENTS

  • Wheat bread slices 4-6
  • Butter/ ghee 1-2 tbsp

FOR PRESSURE COOKING CHICKEN

  • Chicken 200 gm
  • Garlic cloves 2-3
  • Bay leaf 1
  • Cinnamon 1″
  • Cloves 2
  • Salt

FOR THE CHICKEN FILLING

  • Chicken cooked and shredded 1cup
  • Capsicum 1
  • Onion 1
  • Garlic 4-5 cloves
  • Ginger 2″
  • Pepper powder 1 tsp
  • Italian seasoning 1 tbsp
  • Salt to taste
  • Mustard sauce 2 tbsp
  • Tomato chilli sauce 2 tbsp
  • Coriander leaves chopped a handful
  • Olive oil 1 tbsp

METHOD

Pressure cook the chicken with garlic, cloves, cinnamon, salt and bay leaf for 3-4 whistle. Once it cools down, take out the chicken and shred it and keep it aside. (Don’t throw the chicken stock, you can later use for preparing soup).

Finely chop onion, garlic, ginger and capsicum.

Heat 1 tbsp olive oil and saute garlic, ginger and onion till onion turns pink in colour. Add capsicum and saute for two minutes on medium heat. Add the shredded chicken, pepper, salt and Italian seasoning. Incorporate everything well. Turn off the heat and add chopped coriander or parsley leaves.

In a large bowl add tomato chilli sauce, mustard sauce and mix well. Add the above chicken mixture and mix well.

In a flat pan toast the bread slices with butter/ ghee on both sides. Keep it aside.

Take one bread slice, add the filling ( after dividing into 2-3 equal portions) and keep another bread slice on top. Follow the procedure with other slices. Press each sandwich and cut in halves.

Serve it with tea or coffee as breakfast or dinner.
