Coconut has several health benefits. It is highly nutritious and is rich in fiber, vitamins and minerals. The lauric acid in coconut oil helps to stave off infections by killing bacteria, viruses and fungi. Coconut oil improves blood cholesterol levels and protect hair against damage and functions as sunscreen.
Coconut chutney is a South Indian side dish. This is an accomplishment which goes well with South Indian breakfast. Fresh coconut, green chillies, shallots, roasted gram are blended to a fine smooth and tempered with mustard,curry leaves and whole dry red chillies.
INGREDIENTS
Fresh grated Coconut 1 and 1/2 tea cup
Shallots 2-3
Green chillies 2-3 according to taste
Roasted gram/ pottu kadlai 1/4 tea cup
Water 1 cup
Salt to taste
FOR TEMPERING
Coconut oil 2 tsp
Mustard seeds 1/2 tsp
Whole red chillies 2
Curry leaves 1 sprig
METHOD
Blend fresh coconut, shallots, green chillies, roasted gram, salt and water in a blender to a fine paste. Transfer the coconut chutney into a bowl.
Heat oil in a kadai/frying pan add mustard seeds let it splutter. Add broken red chillies and curry leaves. Turn off the heat.
Add the tempering to the coconut chutney.
Serve coconut chutney with Idli, dosa, idiyappam and vadas.
