Eggs are among one of the healthiest and nutritious food. They are consumed all over the world and is a rich source of protein. Hard boiled eggs are good for bones and eyes. Egg whites contains almost no fat and the carbohydrate content is less than 1% , unlike the yolk which is high in fats.

The recipe given below is very simple and easy to cook.

INGREDIENTS

Eggs                                        3
Sweet corn kernels          1 tea cup
Onion medium                   1
Carrot finely chopped    1
Mint leaves chopped       2 tbsp
Green chillies                     1-2(optional)
or Pepper                             1 tsp
Olive oil/refined oil
Salt to taste

METHOD 

Take a deep frying pan heat oil and add onion, carrot, green chillies and saute till onion turns colour, add the sweet corn kernels and saute for two minutes.

Break and add the eggs, salt and mint leaves and scramble it.

Stir continuously till the eggs are done.

Serve hot.
