What happens when you leave your milk on stove. Kulfi happens, forgot milk on stove luckily hubby turned off the stove by then the milk was reduced to half. An idea struck so added sugar, chopped pistas, cashews and cardamom powder..poured in kulfi molds and had awesome kulfis.

Kulfi is a very popular northindian frozen diary dessert. It is traditionally prepared by evaporating sweetened milk through slow cooking and stirring continuously so that it does not stick to the bottom and burn. To flavour nuts, cardamom and saffron are added. Then it is sealed in tight moulds and kept for freezing.

Hot summer and we like to eat and drink something cold. We can prepare homemade kulfi / Indian icecream rather than buying store bought icecream. Kulfi is an Indian version of an icecream which is prepared without eggs and icecream maker. Basic kulfi is made with milk, nuts and cardamom but it can be flavored with saffron, mango and paan.

INGREDIENTS

  • Milk 250 ml
  • Cashews chopped 1 tbsp
  • Pistachios chopped 1 tbsp
  • Cardamom powder 1 /2 tsp
  • Sugar according to taste

SERVES : 4 -6 PERSONS

METHOD

In a deep bottomed vessel add milk and sugar, cook on low heat stirring occasionally till it is reduced to half. The milk should not stick at bottom and burn.

Add the chopped pistachios and cashews. Add cardamom powder and mix everything.

Let it cool down. Once it cools down add to kulfi molds. I poured it into 6 multi molds and kept in deep freezer till it set.

Enjoy your kulfi in hot summertime.
