Kiwi are large berry which grows in woody vines. They are sweet and tangy and filled with lot of flavour. The flesh is green with black seeds. It’s full of nutrients like Vitamins E, Vitamin C, Vitamin K, folate and potassium. They are good source of fiber and full of antioxidants. It aids in digestion, treats asthma and boosts immune system.

Akka(didi) do u want kiwi asked the vegetable vendor and gave me at wholesale price.I was wondering what to prepare with kiwis and ultimately settled for a fruit cake.
Prepared an eggless sponge cake , divided the cake in two horizontally, added whipped cream and topped with slices of kiwis. On top placed the second half of the cake, again did frosting and arranged kiwi slices. I loved the kiwis tartness and sweet taste with the sweetness of the cake.

INGREDIENTS

  • Kiwi 8
  • Maida 1/2 cup
  • Baking soda 1/2 tsp
  • Sugar 3 tbsp
  • Butter milk 1/2 cup
  • Baking soda /2 tsp
  • Refined oil 1/4 cup
  • Salt 1pinch
  • Green colour 1 pinch

FOR THE FROSTING

  • Whipping cream
  • Sugar 1 tsp
  • Water 1 /4 cup

METHOD

Add maida, salt and baking powder,  sift 2 to 3 times. Keep it aside.

Add buttermilk,  baking soda and sugar , cover and keep for ten minutes.


Add the dry ingredients into wet ingredients and mix well. Add oil and mix.
Divide the batter in two parts.


Preheat the oven to 180° C. Line or grease a baking tin.

Add a pinch green colour to one batter and mix.

First pour little of white batter into the baking tray then pour on top little green batter ,then little white batter till everything is over.

Tap it two to three times.

Keep in oven and bake for 20 minutes or skewer comes out clean at 180°C, baking mode ,last rack.


Let it cool down on wire rack.

Discard skin of kiwi and chop horizontally thin slices. keep it aside.

Prepare the whipping cream, pour in piping bag.


Once the cake cools down, divide the cake horizontally in two parts.


Place the down portion of the cake on cake stand and add little sugar water on top with a brush.

Add the whipping cream evenly on top.

Arrange 4 to 5 kiwi slices on top.


Keep the other half of cake on top. Add sugar water, on top evenly add the whipping cream. Frost the sides too .


Cut  the kiwi in halves and arrange from sides on top and come to centre. On sides of cake also keep the half kiwi slices.

Enjoy eggless kiwi cake as a dessert.
