Lollipop chicken or drums of heaven is an indo Chinese dish. Usually chicken wing or thigh bone is used, the flesh is cut and pushed downwards to give a lollipop appearance.

These are then marinated in spicy masala and then deep fried. Then they are coated in a sauce and served with any hot sauce.

Chicken breast is a very good source of selenium, phosphorus, calcium, vitamin B6 and niacin. It helps to keep the bones healthy.
Chicken is high in protein content, rich in vitamins and minerals, aids in weight loss, controls blood pressure, has anticancer properties, reduces cholesterol and treats common cold.

Chicken lollipop is an indo Chinese dish in which meat is down from the bone and flesh is pushed downwards to give a lollipop appearance. They are then coated with spicy batter and marinated. Then they are deep fried in oil. A sauce is prepared and these lollipops are coated in the sauce and served with spicy sauce.

INGREDIENTS

  • FOR MARINATION
  • Chicken 6 -8
  • Chilli powder 1 tsp
  • Pepper 1 /2 tsp
  • Soya sauce 1 tsp
  • Ginger garlic paste 1 tsp
  • Salt 1 /2 tsp
  • Vinegar  1 tsp

FOR BATTER

  • Maida 3 tsp
  • Cornflour 2 tsp
  • Egg 1

OTHER INGREDIENTS

  • Refined oil for deep frying
  • FOR SAUCE
  • Vinegar 1 tsp
  • Soya sauce 1 tsp
  • Tomato sauce 2 tbsp
  • Garlic chopped  2 tbsp
  • Cornflour 2 tsp
  • Shallots chopped 2 tbsp
  • Sesame / refined oil 1 tbsp

METHOD

Cleaning and Preparing chicken lollipop.

HOW TO MARINATE CHICKEN

Add chilli powder, vinegar, soya sauce,  gingergarlic paste, salt , pepper powder in a bowl and mix nicely.

Add the chicken lollipop and coat each one nicely with the masalas. Keep it aside for 4 to 5 hours or overnight to marinate

HOW TO PREPARE BATTER

Three ingredients for making the batter.

Add maida, cornflour, egg and mix nicely. Salt has been added while marination so not adding in the batter.

Add the chicken into the batter and coat each one nicely.

Heat oil in a nonstick or deep frying pan. Once the oil heats up , add each lollipop softly into the oil and cook on medium heat flipping and turning till golden brown in colour. Take out in an absorbent paper or kitchen towel. Keep it aside. You can either add all lollipops  and fry in oil or cook in batches.

HOW TO PREPARE SAUCE

These are the ingredients for the sauce.

Heat  a tbsp oil in a nonstick pan.  Add garlic and shallots and saute them till golden in colour.

Add tomato sauce,  soya sauce, cornflour dissolved in 1/4 cup water. If you want more spicy add chilli sauce or chilli powder.

Once the sauce becomes thick add the chicken lollipop and mix and coat nicely with the sauce. Taste and check for salt, it’s up to you to add salt. Turn off heat.

Serve hot as an appetizer with spicy szechuan sauce.

NOTE : Add salt and chillies according to your taste.
