One of the anciently cultivated crops are long beans.They are fast growing annual herb. I grow it on my terrace in pots. The pods have soluble and insoluble fibers. They are the finest sources of folates,provides average amount of minerals and contain good amount of Vitamin A and C.
The recipe given below is a very common dish prepared in Kerala. Long beans are stir fried with shallots and coconut is added to give a good flavour and taste.
INGREDIENTS
Long beans cut into 1 inch 20 no.
Dry red chillies 2
Shallots cut into halves 10
Mustard seeds 1/2 tsp
Dal 1/2 tsp
Turmeric powder 1/4 tsp
Curry leaves 1 sprig
Coconut grated 1/2 tea cup
Refined oil /coconut oil 1 tbsp
Salt to taste
METHOD
Heat oil in a frying pan add mustard seeds and dal when mustard splutters add the shallots, broken red chillies and curry leaves and fry till onions becomes golden brown.
Add the long beans and little water, cover and cook on low heat till the beans becomes soft. Add salt to taste.
Add the coconut grated, mix it well. Turn off the heat.
Serve hot as a side dish with rice.
