In India fenugreek/methi leaves are eaten as vegetable, they have strong aroma and bitter taste. They are rich in Vitamins such as thiamin, folic acid, riboflavin, niacin, Vitamins A, B6, C , and K . They are a store house of minerals such as copper, potassium, calcium, iron, selenium, zinc, manganese and magnesium. It aids in digestion and controls cholesterol.
The recipe given below is an Indian flat bread in which main ingredients are methi leaves and wheat flour. Methi leaves are mixed with wheat flour and made into a dough. The dough is rested and rolled into disks and cooked in flat pan. Usually ghee(clarified butter) is applied on to the paratha, it gives a nice flavour to the paratha.
INGREDIENTS
Methi/ fenugreek leaves 2 bunch
Wheat flour 2 tea cup
Olive oil/ ghee/ butter 2 tbsp
Water as required
Salt to taste
METHOD
Wash methi leaves 3-4 times in water. Drain the water.
In a large bowl add wheat flour, required salt, methi leaves and add little by little water as required to make a dough. Knead well for 10 minutes. Cover and keep it aside for 30-45 minutes.
Divide the dough into balls of equal size. Roll out each dough into 6-7 inch in diameter.
On medium flame heat a flat pan, when the pan becomes hot put the rolled out disk in it.
Add ghee/butter/oil on each side. Flip it cook on both sides for 2-3 minutes or till they are done.
Serve hot with raita/pickle/veg or non veg curry.
