To get the nutritional benefit of mushroom it has to be cooked. It’s a good source of calcium, fiber, selenium, protein, iron, vitamin C, vitamin D, potassium and phosphorus. It’s low in calories, helps in fighting cancer, boosts immune system and prevents heart disease.
Button mushroom is the most common variety of mushroom consumed all over the world. White button mushroom is sold as fresh mushroom or is canned and used for soups, sauces and other food product.
This recipe is very easy to make. Make a wet paste of onions, tomatoes, garlic, coriander-powder and cashews (after frying them in oil) and add to whole spices. Add mushrooms and cook in the masala till done. Lastly add kasuri methi. The dish goes well with Indian bread or rice.
INGREDIENTS
FOR WET GRIND
- Onion chopped 1
- Tomato chopped 2
- Garlic 4-5
- Coriander powder 2 tsp
- Cashews 4-5
OTHER INGREDIENTS
- Kassori methi 1 tbsp
- Clove 2
- Cinnamon 1 inch
- Cardamom 2
- Oil/ Butter/ ghee 1 tbsp
- Salt to taste
- Chilli powder 1/2 – 1 tsp
METHOD
In a deep frying pan/ kadai heat a tsp oil. Add roughly chopped onion and saute till translucent. Add Coriander powder and sauté for a minute, add chopped tomatoes and saute till it becomes mushy Add garlic and cashews and saute for a second and turn off the heat. When it cools down blend in a blender to a fine paste.
In a kadai heat two tsp oil/ ghee / butter and add cardamom, cloves, cinnamon and saute for a minute on low heat. Cook on low heat so that the spices don’t get burnt and it releases its aroma in the oil slowly.
When cloves and cardamom puffs up, add the ground paste and on low heat saute till the raw smell of garlic disappears. It might take 3-4 minutes and u have to continuously stir it.
Add mushrooms and chilli powder and incorporate the masala well with the mushrooms. Add 1 to 1 1/2 tea cup water, mix well. Consistency of the gravy is up to you so adjust water aaccordingly. Season with salt , cover and cook for ten to fifteen minutes on low heat.
Take some kasuri methi and rub it with both hands and add it to the curry , incorporate it with the mushrooms, turn off the heat.
Serve hot with phulkas/ naan/ roti/ parathas/ bread.
