Button mushroom is the most common variety of mushroom consumed all over the world. White button mushroom is sold as fresh mushroom or is canned and used for soups, sauces and other food product.
Consuming mushrooms helps in preventing heart disease and cancer, boosts immune system, it includes rich amount of Vitamin D and potassium.
I just tried out and created my own version of mushroom masala curry and it tasted good, hence decided to post this. I have made a fried paste of onion, tomatoes, garlic and coconut. Cooked with mushrooms, adding garam masala and pepper. It goes well with rice or roti.
INGREDIENTS
- Mushroom 200gm
- Garam masala 1/2 tbsp
- Refined oil 2tsp
- Coriander leaves chopped 2tbsp
- Pepper powder 1 – 2 tsp
- Salt to taste
FOR WET GRIND
- Onion 1
- Tomato 2
- Coriander powder 1tbsp
- Turmeric powder 1/4tsp
- Fresh coconut 2 tbsp
- Garlic cloves 3-4
METHOD
Chop onions and tomatoes roughly.
Nicely wash and cut the mushrooms and keep it aside.
In a kadai heat oil add onions and garlic, sauté till it becomes translucent. Add coriander powder, turmeric powder and sauté for a minute on low heat , don’t burn it. Add tomatoes and saute for two minutes or till they become mushy. Add coconut and saute for two minutes. Turn off the heat and let it cool.
When the mixture has cooled down blend it in a blender to a smooth paste.
Add the mushrooms and cover and cook for 2-3 minutes on low heat. Mushrooms will release water and they will cook in their own juice. Add the ground mixture into the mushroom and add 1/2 cup water ,cover and cook for 7-8 minutes. Add garam masala and pepper and cook for two more minutes or till it becomes thick.
Garnish with coriander leaves and serve with rice, roti or bread.
