Bell peppers are available in yellow, orange, red, purple, green. They are bell shaped ,plump and are also known as capsicum, basically less pungent and sweet than other peppers. For their attractiveness and colour these vegetables are used all over the world.

They are rich in antioxidants and have anti-inflammatory properties. Green pepper is good for healthy hair and nails, it is low in fat and calories.

This recipe is easy to prepare and delicious.  It goes well with roti/ bread or rice. Button mushrooms, baby corn, potato and red, green, yellow bell peppers are used to prepare this dish. Eating colorful variety of fruits and vegetables everyday is good for our health.

INGREDIENTS

Mushroom              150 gm
Potato medium       1 cut in cubes
Onion medium       1 finely diced
Tomato                     2 medium finely diced
Ginger finely diced 1 tbsp
Garlic finely diced  1 tbsp
Red capsicum          1/2 medium
Green capsicum      1/2 medium
Yellow capsicum     1/2 medium
Baby corn                  1
Garam masala powder 1 tsp
Coriander powder  2 tsp
Oil                               2 tsp
Coriander leaves     for garnishing
Pepper powder 1 tsp/chilli powder 1 tsp
Salt to taste

METHOD

Heat oil in a wok/kadai and add baby corn, green, yellow, red bell peppers and on medium heat saute for 5 minutes. Season it with salt. Keep it aside

In a wok /kadai heat oil and add finely diced onion,ginger and garlic on medium heat and saute till onion changes colour. Add coriander powder and saute till the raw smell disappears.

Add the tomato and saute till tomato becomes soft. Add the mushrooms and cook for 5 minutes. Add garam masala powder and saute for a second. Add 1 cup water and boiled potatoes and simmer and cook for 5-7 minutes. Add pepper powder and salt to taste.

Add the stir fried vegetables and nicely incorporate it in the curry. Garnish it with coriander leaves.
