Okra is also known as lady’s finger or gumbo. Eating okra prevents high blood pressure, diabetes and it helps in good digestion. It contains folate and are antioxidant.
In this recipe okra is cooked in yogurt and coconut sauce. The spices brings out a special flavour to the dish..
INGREDIENTS
Okhra/ lady fingers 15
Oil 1-2 tbsp
Turmeric 1/2 tsp
Salt to taste
FOR WET GRIND
Coconut 3/4 tea cup
Yogurt 3/4 tea cup
Green chilies 3-4
Cumin seeds 1 tsp
Asafoetida 1/2 tsp
Channa dal 1 tsp
Water 1 tea cup
FOR SEASONING
Coconut oil 1 tbsp
Cumin seeds 1/2 tsp
Mustard seeds 1 tsp
Fenugreek 1 tsp
Curry leaves 2 sprigs
Asafoetida 1/2 tsp
Whole red chilies 2
METHOD
Soak channa dal in water for ten minutes.
Blend coconut, green chilies, yogurt, cumin seeds, asafoetida, channa dal into a smooth paste. Add water and again blend. Keep it aside.
Wash the okhra and wipe it with kitchen towel. Chop it finely.
Heat oil in a kadhai add mustard, fenugreek, cumin seeds. Let it splutter then add asafoetida, broken red chilies and curry leaves. Take it out in a plate and keep it aside.
Take the same kadhai add 1-2 tbsp oil saute the okhra. Cook till they are done. Add the ground coconut paste and cook on low heat till everything is incorporated well. Turn off the heat.
Add the seasoning into the curry.
Serve with steamed rice.
