Oranges are rich in Vitamin C , B1 and A. High amount of anti oxidant helps in increasing immunity. Body becomes resistant towards common cold, flu and infections.
I had some fresh oranges so thought of making orange cake. Fresh orange juice and orange zest are the two main ingredients which gives flavour to the orange cake. Rest of the ingredients like flour, butter, eggs, baking powder, milk are same as used in an ordinary cake.
INGREDIENTS
Butter 3/4 tea cup
Sugar 1 tea cup
Eggs 3
Maida/flour 1 1/2 tea cup
Baking powder 1 tsp
Orange juice 3/4 tea cup
Orange zest 1 1/2 tsp
Milk 1/2 tea cup
METHOD
Separate the egg yolks from whites and keep the yolks and whites in separate bowls. Beat the egg whites till they are stiff, beat the yolks also.
Mix butter and sugar in a bowl with a spoon. Beat it till it becomes fluffy. Mix the yolks into the mixture with a wooden spoon till light.
In a big bowl add flour, baking powder, orange juice, orange zest and milk. Mix everything together into a smooth batter. Fold the egg whites to the batter with a metal spoon.
Preheat the oven to 160 deg C for 10 minutes. Grease your baking tray with butter, add the cake batter. Stand the baking tray in a pan of water and bake for 1 hour or until it is cooked.(if water dries in the pan add water).
Check with a tooth pick if the cake is done if needed bake for some more time.
FOR ICING
Butter 1 tea cup
Icing sugar. 2 tea cup
Milk. 2 tbsp
In a large bowl mix the butter nice and fluffy. Add the icing sugar little by little and beat it well. Add milk and beat well.
Apply on top and sides evenly. Even you can cut horizontally the cake into half and in between apply the icing. Peel the oranges ,pomegranate and decorate on top. Keep the cake in the fridge after icing.
