Hot summer and we like to eat and drink something cold. We can prepare homemade kulfi / Indian icecream rather than buying store bought icecream. Kulfi is an Indian version of an icecream which is prepared without eggs and icecream maker. Basic kulfi is made with milk, nuts and cardamom but it can be flavored with saffron, mango and paan.

Kulfi is a popular frozen Indian diary dessert. It is traditionally prepared by evaporating sweetened milk through slow cooking and stirring continuously so that it does not stick to the bottom and burn. To flavour nuts, cardamom and saffron are added. Then it is sealed in tight moulds and kept for freezing.

Some benefits of eating betel leaves are it helps in relieving pain and inflammation, reduces gastric pain, improves digestion, eases constipation, treats headache and nosebleed, stops earache and refreshes breadth.

In this recipe I have added homegrown organic paan/betel leaves which I grow in pots. Not much ingredients are needed to make this dessert. It tastes delicious and quite refreshing during summer months.

INGREDIENTS

• Milk 500 ml
• Betel/paan leaves 5
• Sugar 3-5 tbsp
• Cashew nuts 7-8
• Pistachios 7-8
• Almonds 7-8
• Cornflour 2 tsp
• Saffron 1/4 tsp
• Cardamom 5-6

FOR GARNISHING

Chopped or crushed nuts 2 tbsp

METHOD

In a blender blend the cashews, pistachios, almonds, betel leaves and little milk to a coarse paste. Keep it aside.


Take out 2 tbsp milk (from 500 ml milk)and add 2 tsp corn flour in a bowl, mix and keep it aside.

Boil the rest of the milk in a wide deep vessel, once it comes to a boil, take out 2 tbsp milk in a bowl. Add the saffron in that milk and keep it aside.

Keep boiling the milk till it reduces to 1/3. Add sugar and mix well. I added 4 tbsp sugar, if you want more or less, add accordingly.

Add cornflour on low heat and let the milk thicken.

Add saffron, bring it to a boil. Turn off the heat. Let it cool down.

Add the betel paste and mix well. Again put it in a blender and blend everything.

Add to the kulfi molds and keep in deep freezer overnight or till it sets.

Once it sets take out the from the molds, dip in warm water half way for two seconds and demold. Garnish with crushed nuts and enjoy!!!
