Spinach is full of nutrients( Vitamin K, A,B2,B6, E, potassium,magnesium, calcium, zinc, dietary fiber, copper, omega 3 fatty acids, phosphorus, Folate (iron), selenuim). Palak paratha is specially good for children and it makes great breakfast and lunch box.
In this recipe spinach is mixed in equal ratio to wheat flour and made into a dough. Carom seeds are added to give it a unique and distinct taste. Then it is rolled out and cooked in flat pan. Ghee/ butter is added to it. Tasty parathas are ready and can be served with curd and pickles.
INGREDIENTS
Spinach/palak (chopped) 2 tea cups
Wheat flour 2 tea cups
Water as required
Salt to taste
Carom seeds 1/4 tsp
Ghee/Butter/Olive oil 4-5 tsp
METHOD
Take a bowl add wheat flour, finely chopped spinach, carom seeds and salt and mix it well. Add required amount of water little by little and make a smooth dough. Cover it and keep it aside for half an hour.
Divide the dough into five balls. Sprinkle flour on the rolling pin and working place and roll out each dough into a circle ofabout 5-6 inches in diameter.
Heat a flat non stick pan and on medium heat cook the paratha greasing each side with 1/2 tsp ghee/butter till they are crisp and brown on both sides. Repeat with all the other parathas.
Serve hot with pickle or yogurt salad.
