Water anarnath or ponnanganni keerai is very popular in South India. It originated in America and was later introduced to Asia. Its leaves are used in curries and soups and it comes in many variety- red, green and bicolour. It has lot of health benefits like improves kidney function, bone growth, protects from osteoporosis.
I am using home made greens. Its organic and tastes good.
INGREDIENTS
Water amarnath/ ponnanganni keerai 1 bunch
Red spinach 1 bunch
Garlic 3-4 cloves
Ginger 1 inch
Green chillies 2/pepper powder
Boiled peanuts 1/2 tea cup
Sprouts 1/2 tea cup
Onion finely diced 1 no.
Tomato finely diced 2 no.
Turmeric 1/4 tsp
Oil 2 tsp
Salt to taste
METHOD
In a pressure cooker cook the raw peanuts for 4 whistles with little salt.
Wash the green 3-4 times in water and dice finely.
Heat oil in a wok add finely diced onion, green chillies, garlic and ginger and saute till onion becomes transparent. Add turmeric powder and saute for a minute. Add the tomatoes and saute till it becomes soft. Add the red spinach and water amarnath and on low heat cover and cook for 5- 10 minutes, stir occasionally.
When the spinach is cooked add peanuts and sprouts and season with salt.
Serve with rice or roti
