Peanuts are a good source of protein, omega -3, Vitamin E, antioxidants, good fats, fibre and nutrients.
It decreases heart disease, reduce risk of diabetes, gall bladder disease and colorectal cancer.
For navrathri and Ganesh chathurthi sundal is prepared. It is a perfect snack, good accompaniment with roti or rice and also prepared as prasadam.
INGREDIENTS
- Peanuts 1 cup
- Salt to taste
- Mustard seeds 1 tsp
- Coconut oil 1 tbsp
- Red dry chillies 2-3
- Asafoetida 1/4 tsp
- Curry leaves a handful
- Freshly grated coconut 1/4 cup
METHOD
Pressure cook peanuts with salt and water for three four whistles. After it cools down drain the water and keep aside.
In a deep frying pan heat Coconut oil. Add the mustard seeds, let it splutter. Add the curry leaves and grated fresh coconut, saute for a minute on low flame.
Add the boiled peanuts and incorporate them well. Check for salt. Turn off the heat.
Delicious peanut sundal is ready to be served.
