Sweet corn is one of the most popular vegetable, has innumerable health benefits and because of its sweet flavour is loved by adults and children. Corn is rich in anti oxidants and that helps to keep the skin younger. It is stuffed with fiber so helps in digestion. It is rich in Vitamin B and folate that prevents anemia. It controls cholesterol and prevents cancer.

The recipe given below can be taken as an evening snack. Sweet corn kernels are mixed with mint leaves and cheese and stuffed in mashed potato balls.It is rolled into balls. Then it is coated with cornflour and bread crumbs.

INGREDIENTS

Boiled Potato medium               2
Garlic                                            3 cloves
Boiled sweet corn kernels       1/2 cup
Mint leaves finely chopped     2 tbsp
Green chilly                             1-2 finely chopped
Oregano                                    1 tsp
Cheese grated (cheddar mozzarella cheese) 2-3 tbsp
Corn flour                            2 tbsp
Bread crumbs                    1 tea cup
Oil for deep frying
Salt to taste

METHOD

Take a deep pan heat a tsp of oil add garlic paste and saute for a minute on low heat then add the mashed boiled potatoes. Mix it together for 2 minutes. Turn off the heat.Let it cool down.

Mix in a bowl the above mashed potato, 1 tsp cornflour and 1 tbsp bread crumbs and salt. Divide and make small balls (lemon size). Keep it aside. I made 8 small potato balls.

Take cornflour and mix it with water. keep it aside.

In a plate spread the bread crumbs.

In a bowl mix sweet corn kernels, grated cheese, green chillies, oregano and mint.

Make a depression with your thumb in a ball of potato, stuff 3/4 tsp corn cheese mixture and roll back into a ball. Repeat the same with all the other potato balls.

Dip or roll in the cornflour, take it out and then roll in the bread crumbs. Gently press the cheese balls.

Heat oil and deep fry them.

Serve hot with tomato sauce.
