Pumpkin has lot of health benefits. Its rich in fiber, potassium and vitamin C. It’s good for heart, boosts immunity, helps in weight loss, reduces cancer risk and prevents skin aging.
I brought homegrown pumpkin from my parents house and have been trying out lot of new dishes to make from this pumpkin. As this pumpkin is sweet so thought of making kheer. This pumpkin kheer recipe is very easy to prepare. To make it more healthier jaggery is added instead of sugar.
INGREDIENTS
- Pumpkin grated 1cup
- Rice 1 tbsp
- Jaggery grated 1/2 cup
- Cardamom powder 2 tsp
- Badam 5-6
- Raisins 8-10
- Milk 1/4 litre
- Ghee(clarified butter) 1 tbsp
METHOD
Soak the rice in water for an hour.
Peel the outer skin of pumpkin and grate it. Keep it aside.
In a kadai heat ghee add chopped badam or cashenut and raisins. Keep it aside.
In a vessel add little water, let it come to a boil add the jaggery and let it dissolve completely. Strain it and keep it aside.
Take a deep bottom vessel, add the milk. When it comes to a boil , drain the water from the rice and add to the milk. On low heat stirring occasionally cook the rice making sure it doesn’t stick to the bottom of the pan.
Once the rice is cooked add the grated pumpkin. Mix well and cook on low heat till pumpkin is cooked. Turn off the heat.
Add cardamom powder , badams and raisins. After a few minutes add jaggery syrup and mix well.
Serve warm or chilled.
