Unniyappam is a traditional, tasty and popular snack of Kerala (south India). This is prepared during festival and feasts and served as praised in temples. They are basically sweet fritters made with banana and rice flour. Its is gluten free and vegan recipe.

Unni means small and appam means rice cake. Unni appam is prepared from rice, jaggery, banana, cardamom powder, ghee and coconut pieces.

For making unni appam you need special vessel/ebelskiver/ paniyaram moulds. Bananas and cardamom powder with small bits of coconut pieces fried in ghee brings out a unique taste and flavour. My whole family loves this snack, especially my son and it is our favourite snack.

SERVES : 3 -4 person( 14 appams)

INGREDIENTS

  • Banana robusta 2
  • Cardamom powder 2 tsp
  • Jaggery 1 /2 cup
  • Coconut grated 1/4 cup
  • Sesame seeds black 2 tsp
  • Raw Rice flour 1/2 cup
  • Ghee 2 – 4 tbsp
  • Coconut oil 1 /4 cup

METHOD

De skin the bananas and add a blender along cardamom powder.

Blend it to a smooth paste.

Add the rice flour and blend again nicely to a smooth paste.

Add coconut grated, mix well. ( chopped coconut pieces fried in ghee can be added too).

Add sesame seeds,Salt and mix well.

Take a paniyaram pan( I am preparing in castiron) . Add oil and ghee heat the cast iron.

When the oil heats up, lower the flame add the batter, cook on low to medium heat.

Once it is golden brown turn and cook the other side too.

Enjoy it with your evening tea.
