Spaghetti can be prepared in many ways , it is a versatile food which goes with variety of sauces and toppings. Toss some garlic and olive oil with spaghetti to get a simple dish . Tomato sauce, garden vegetables and Parmesan cheese can be added to make an elaborate dish.Whole grain spaghetti contains high amount of nutrients, potassium, magnesium and fiber.
In this recipe vegetables, garlic are stir fried and eggs, parmesan cheese seasoned with pepper and kasuri methi is mixed with spaghetti to make a terrific dish.
INGREDIENTS
Spaghetti 200 gms
Capsicum green and yellow 1 each cut in squares
Onion medium 1
Kasuri methi / parsley 2 tsp
Eggs 2
Pepper 2 tsp
Garlic minced 4-5 cloves
Chilli flakes (optional) 1 tsp
Oregano 2 tsp
Parmesan cheese 1 – 2 tbsp
Olive oil 1 tbsp
Salt to taste
METHOD
Bring to boil salted water in a deep bottomed pan. When it starts boiling put the spaghetti. You can break into half. Spaghetti should be soft in the center and not mushy when it is cooked ( al dente). Strain it in a colander and drizzle some olive oil. Keep it aside.
In a bowl beat the eggs, pepper, oregano and Parmesan cheese.
Take a deep frying pan heat olive oil add the garlic saute for a second then add the onions, capsicum and stir for 2 minutes at medium heat. Add the hot spaghetti and mix well.
Pour the eggs cheese mixture and mix it well until eggs thicken and slightly scramble. Turn off the heat.
Add kasuri methi and mix it well.
