Benefits of eating corn is it promotes healthy vision, aids in digestion, helps in weight loss, it contains B12, iron and folic acid and it lowers cholesterol.
Eating in large quantities is not good, if undigested it causes cramps and gas.
For navrathri and Ganesh chathurthi sundal is prepared. It is a perfect snack, good accompaniment with roti or rice and also prepared as prasadam.
INGREDIENTS
- Boiled sweet corn kernels 1 cup
- Salt to taste
- Mustard seeds 1 tsp
- Coconut oil 1 tbsp
- Red dry chillies 2-3
- Asafoetida 1/4 tsp
- Curry leaves a handful
- Freshly grated coconut 1/4 cup
METHOD
After removing the green outer husk and silk threads, pressure cook corn with salt and water for three four whistles. After it cools down , take a knife and cut the corncob close to the core to remove the kernels out and keep it aside.
In a deep frying pan heat Coconut oil. Add the mustard seeds, let it splutter. Add the curry leaves and grated fresh coconut, saute for a minute on low flame.
Add the boiled sweet corn kernels and incorporate them well. Check for salt. Turn off the heat.
Delicious sweet corn sundal is ready to be served.
