Punjabi chole is an authentic dish of northern part of India. Main ingredient of this dish is chickpeas/ kabuli chana which is very high in protein. It stabilizes blood sugar, controls blood pressure and prevents anemia.

This recipe is very simple, I am not using any garam masala or garlic. This is my mom’s version of chole, she used to make this when we were small children. The taste of tamarind and coriander powder still lingers on my tastebud. It tastes very delicious, now I make this more often because it is not heavy with masala and is easy to make.  In this recipe coriander powder is added to onions and chickpeas and cooked in tamarind sauce.

INGREDIENTS

  • Chick peas      1/2 cup
  • Onion chopped big    1
  • Ginger chopped       2 tbsp
  • Tamarind lemon size
  • Coriander powder     1 tbsp
  • Turmeric powder      1/4 tsp
  • Chilli powder             1-2 tsp
  • Coriander leaves chopped
  • Salt to taste
  • Oil.                                  1tbsp

METHOD

Wash and soak chickpeas overnight. Add salt and pressure cook the chick peas for 4-5 whistles or until it is cooked.

Soak the tamarind in water for sometime, squeeze the pulp with your hand and keep the tamarind juice aside.

Heat 1 tbsp oil in a kadai/ wok. Add finely chopped onion, finely chopped ginger and a pinch of salt. Sauté till onion changes colour.

Add turmeric powder, chilli powder and coriander powder and sauté for a minute on low fire.

Add the chick peas with the water and tamarind juice. Check for salt as it has been already added in the chickpeas. Cover and cook on low heat till the water is reduced and gravy becomes thick. Turn off the heat. Consistency of the gravy is up to you.

Garnish with coriander leaves and serve hot with chappathi/puri/Indian bread/bread/rice.
