Tomatoes are high in lycopene and is great for the skin, eyes, heart and may likely reduce lung, stomach, prostrate cancer.

The tomato sauce recipe I have given is a very easy recipe, this sauce can be refrigerated and used later for preparing pizza, pastas, based indian curry etc.. very few ingredients are used for preparing this tomato sauce. I added some spices in a muslin cloth and tied iten added into the sauce when it was cooking. The spices slowly releases its flavour into the sauce and gives it a very unique flavour and taste. Once the sauce is prepared take out the muslin cloth and discard it. I vaguely remember during my childhood days a friend of my mom came home to help to prepare the sauce and the idea to put the spices in muslin cloth was hers. I too tried and it really tasted good.

INGREDIENTS

  • Tomatoes 2kg
  • Salt as per taste
  • Sugar as per taste
  • Vinegar 1 tbsp
  • Cardamom 2
  • Cinnamon 1 inch piece
  • Cloves 3

METHOD

Heat water in a large vessel ,add the tomatoes. Cook till crack appears on tomato skin. Turn off heat. Let it cool down.

Peel off the skin and discard it.

Blend the tomatoes in a blender in batches.

Blend to a fine puree.

Strain and discard the seeds.

Cook the tomato puree on low heat.

Add the spices in a muslin cloth and tie it. Slightly crush it.

Add this into the sauce.

Add salt and sugar.

Cook till it becomes thick.

Remove the spices ,discard.

Add vinegar. Turn off heat.

After it cools down ,pour in sterilized bottles, free of moisture. Refrigerate and use later to prepare pizza, pasta, noodles etc.
